Matcha Madeleine Recipe: How to Make Soft & Fluffy Japanese Matcha Madeleines

Soft, buttery, lightly sweet, and beautifully green, Matcha Madeleines are the perfect fusion of French pastry and Japanese tea tradition. If you love anything matcha, or you’re looking for a unique treat to serve in your café, at home, or add to your menu, this is the right recipe for you.

Ingredients (for 12-15 Madeleines):
  • 90g unsalted butter (melted & cooled)
  • 2 large eggs (room temperature)
  • 80g sugar
  • 100g all-purpose flour
  • 5-10g matcha powder (adjusted according to your taste)
  • 1/2 tsp baking powder
  • 1 pinch of salt
  • 1 tbsp milk (optional, for moisture)
Instructions:

1. Melt the butter

Preheat the oven to 220°C.

Melt the butter on low heat, then let it cool fully. This ensures a smooth, not greasy batter

2. Beat the eggs and sugar

Whisk the eggs and sugar until pale and slightly thick; this will give the madeleines their signature rise

3. Sift dry ingredients

In another bowl, sift together flour, matcha powder, baking powder, and salt. Sifting prevents matcha lumps and keeps the green colour even.

4. Combine wet and dry

Gently fold the dry ingredients into the egg mixture. Do NOT overmix, overmixing = tough madeleines

5. Add butter

Slowly pour in the melted butter and fold until fully absorbed. Rest the batter in the fridge for at least 1 hour (overnight is the best). This gives you the ideal "hump" on your madeleine.

7. Bake

The oven should be heated to 220°C by now. Grease a madeleine tray with butter and fill each cavity to 70%-80% full. 

Bake for 4 minutes, then reduce the heat to 180°C and bake another 6-7 minutes. You'll see the beautiful dome rise.

8. Cool and serve

Let the madeleines cool slightly, then enjoy warm or at room temperature.
